Orange & Cinnamon Cookies
I made these to go with the Spicy Turmeric Chai Latte (recipe here) I made yesterday but really they're just an easy, tasty little treat that goes with any hot drink and you can throw together in under half an hour.
They can be frozen for up to 6 months or kept in an airtight container in the fridge for up to a week but they never usually last that long!!
RECIPE: Makes 12
INGREDIENTS
250g ground almonds
1 teaspoon bicarbonate of soda
2 ½ teaspoons ground cinnamon
4 tablespoons coconut oil, melted
2 teaspoons vanilla essence
2 tablespoons maple syrup
60g raisins
Zest of two oranges
METHOD
Preheat oven to 160° (fan)
Line a baking tray with parchment
Either in a bowl or a food processor, combine the ground almonds and bicarbonate of soda
Then add all the other ingredients apart from the raisins and combine well
Add the raisins and mix in with a spoon
Taking a small handful of the mixture, squeeze into a ball, place on the tray and flatten it down into a cookie shape
Bake for 10 minutes
Remove and place on a cooling rack for a few minutes
TIPS
The mixture is quite crumbly so it’s sometimes easier to form the cookie shapes in your hand before putting them on the tray
They are still quite crumbly when they come out of the oven but firm up on standing
